is cold water swelling tapioca starch. It is extracted from Vietnamese
cassava by means of a process that only uses ground water. It is thus
possible to achieve an untreated starch with a high degree of purity -
physically, chemically as well as microbiologically. ColdSwell 1112 is made cold water swelling by using a special technique that ensures intact starch granules in the end product, thus providing a superior water binding capacity that does not require heating. ColdSwell 1112 is characterized by giving a very transparent high viscosity paste. Depending on the concentration it forms a gel or a paste. ColdSwell 1112 has a very neutral flavour profile. |
| Application | ColdSwell is used in a broad range of applications, primarily in snacks, sauces, and soups. ColdSwell is, however, also very suitable as a filler. |
